Ghee is the essence of butter and the very best of all cooking mediums. It is made by heating butter very slowly until all the water is driven off and the solids have separated, leaving a clear golden-yellow oil.
Preparation and cooking time:
2 lbs (1 kg) – 1/2 hr of cooking – 1 3/4 lbs (800 g) of ghee
5 lbs (2.5 kg) – 3 hr of cooking – 4 1/2 lbs (2.2 kg) of ghee
10 lbs (5 kg) – 5 hr of cooking – 9 lbs (4.6 kg) of ghee
